Ingredients
- 250 g Golden Crown Macaroni Rigate
- 1 cup Golden Crown Sweet Corn Kernels (drained)
- ½ cup Seville Premium Green Pitted Olives, sliced
- 1 medium carrot, finely diced (optional for crunch)
- ½ cup capsicum (red or green), chopped
- ½ cup mayonnaise
- 2 tbsp thick yogurt (for lightness)
- 1 tsp mustard sauce (optional, for tang)
- ½ tsp black pepper powder
- Salt – to taste
- 1 tbsp vinegar or lemon juice
- Fresh parsley or spring onion greens – for garnish
Instructions
- 01 Boil water with a pinch of salt and cook Golden Crown Macaroni Rigate until al dente. Drain, rinse under cold water, and set aside.
- 02 In a large mixing bowl, combine mayonnaise, yogurt, vinegar/lemon juice, black pepper, and salt. Mix well to form the dressing.
- 03 Add cooked macaroni, Golden Crown Corn Kernels, Seville Premium Green Pitted Olives, diced carrot, and capsicum to the bowl.
- 04 Toss everything gently until the macaroni is well coated with the creamy dressing.
- 05 Cover and refrigerate for at least 30 minutes to let the flavors blend.
- 06 Garnish with fresh parsley or spring onion greens before serving.
