Coconut Milk and Vermicelli Payasam

Ingredients

  • Golden Crown Coconut Milk – 1 can (400 ml)
  • Golden crown Vermicelli – ½ cup
  • Jaggery (or sugar) – ¾ cup (adjust to taste)
  • Water – 2 cups
  • Cardamom powder – ½ tsp
  • Cashew nuts – 10
  • Raisins – 10
  • Ghee – 2 tbsp

Instructions

  • 01Heat ghee in a pan, fry cashew nuts and raisins until golden, then set aside.
  • 02In the same pan, lightly roast Golden Crown Vermicelli for 2–3 minutes until golden brown.
  • 03Add 2 cups of water and cook vermicelli until soft.
  • 04Stir in jaggery (or sugar) and cook until it melts completely.
  • 05Lower the flame and gently add Golden Crown Coconut Milk. Stir well.
  • 06Add cardamom powder and simmer for 3–4 minutes (do not let it boil vigorously).
  • 07Garnish with fried cashews and raisins.
