South Indian Style Golden Crown Mackerel Curry

Ingredients
- Golden Crown Mackerel Fish in brine – 1 can
- Coconut oil (or any cooking oil) – 2 tbsp
- Mustard seeds – 1 tsp
- Curry leaves – 1 sprig
- Onions, thinly sliced – 2 medium
- Green chilies, slit -2
- Golden crown Ginger-garlic paste – 1 tsp
- turmeric powder – ½ tsp
- red chili powder – 1 tsp
- Coriander powder – 1 tsp
- Black pepper powder – ½ tsp
- Canz coconut milk – ½ cup
- Salt – to taste (adjust as canned fish may already have salt)
- Fresh coriander leaves – for garnishing
Instructions
- 01 Heat coconut oil in a pan. Add mustard seeds, let them splutter. Toss in curry leaves.
- 02 Add onions and green chilies; sauté till golden brown.
- 03 Stir in ginger-garlic paste; cook till raw smell disappears.
- 04 Add turmeric, chili, coriander, and pepper powders. add Golden crown tomato puree Sauté on low flame for 5 minute.
- 05 Gently add the canned Golden Crown Mackerel . Stir carefully without breaking the fish.
- 06 Add ¼–½ cup water or thin coconut milk if you prefer a thinner curry. Simmer 5–7 minutes on low flame.
- 07 Taste and adjust salt. Garnish with fresh coriander leaves.

- 09 Serve hot with steamed rice, Kerala parotta, dosa, or appam.
