Ingredients
- 1 cup Golden Crown Baby Corn (cut into halves)
- 1 cup Golden Crown Peas
- 1 cup Golden Crown Mushroom (sliced)
- 2 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 onion (finely chopped)
- 1 tbsp ginger-garlic paste
- 2 tomatoes (pureed) or 1 cup Golden Crown Tomato Puree
- 1 green chilli (slit)
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp Golden Crown Coriander Powder
- ½ tsp garam masala
- ½ tsp dried fenugreek leaves (kasuri methi)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- 01Heat oil in a pan, add cumin seeds and let them splutter.
- 02Add onion and sauté till golden brown. Stir in ginger-garlic paste and cook till aromatic.
- 03Add tomato puree, green chilli, turmeric, chilli powder, and coriander powder. Cook until oil separates.
- 04Add baby corn, peas, and mushrooms. Stir well and cook for 5–6 minutes.
- 05Add 1 cup water, cover, and simmer for 8–10 minutes until vegetables are tender.
- 06Sprinkle garam masala and kasuri methi, mix gently, and simmer for 2 minutes.
- 07Garnish with coriander leaves and serve hot with naan, roti, or rice.
