Baby Corn, Peas & Mushroom Masala

Ingredients

  • 1 cup Golden Crown Baby Corn (cut into halves)
  • 1 cup Golden Crown Peas
  • 1 cup Golden Crown Mushroom (sliced)
  • 2 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 onion (finely chopped)
  • 1 tbsp ginger-garlic paste
  • 2 tomatoes (pureed) or 1 cup Golden Crown Tomato Puree
  • 1 green chilli (slit)
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp Golden Crown Coriander Powder
  • ½ tsp garam masala
  • ½ tsp dried fenugreek leaves (kasuri methi)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  • 01Heat oil in a pan, add cumin seeds and let them splutter.
  • 02Add onion and sauté till golden brown. Stir in ginger-garlic paste and cook till aromatic.
  • 03Add tomato puree, green chilli, turmeric, chilli powder, and coriander powder. Cook until oil separates.
  • 04Add baby corn, peas, and mushrooms. Stir well and cook for 5–6 minutes.
  • 05Add 1 cup water, cover, and simmer for 8–10 minutes until vegetables are tender.
  • 06Sprinkle garam masala and kasuri methi, mix gently, and simmer for 2 minutes.
  • 07Garnish with coriander leaves and serve hot with naan, roti, or rice.
