Ingredients
- Mr. Freeze Frozen Mixed Vegetables – 2 cups (carrot, beans, peas, potato, cauliflower, etc.)
- Golden Crown Coconut Milk – 1 can (400 ml)
- Onion – 1 large (thinly sliced)
- Green chillies – 2 (slit)
- Ginger – 1 inch (julienned)
- Garlic – 4 cloves (sliced)
- Black pepper – ½ tsp (coarsely crushed)
- Cloves – 3
- Green cardamom – 2
- Cinnamon stick – 1 small piece
- Curry leaves – 1 sprig
- Coconut oil – 2 tbsp (for authentic Kerala flavor)
- Salt – to taste
Instructions
- 01Heat coconut oil in a deep pan. Add cloves, cardamom, cinnamon, and curry leaves. Sauté for 30 seconds until fragrant.
- 02Add sliced onion, ginger, garlic, and green chillies. Cook until onions turn soft and translucent (do not brown).
- 03Add Mr. Freeze Frozen Vegetables and sauté lightly for 2–3 minutes.
- 04Add ½ cup water, cover, and cook until vegetables are just tender.
- 05Stir in Golden Crown Coconut Milk and season with salt and crushed black pepper.
- 06Simmer on very low heat for 5 minutes (do not let it boil vigorously).
- 07Switch off the flame and keep covered for 5 minutes to allow flavors to blend.
