Kerala-Style Vegetable Stew

Ingredients

  • Mr. Freeze Frozen Mixed Vegetables – 2 cups (carrot, beans, peas, potato, cauliflower, etc.)
  • Golden Crown Coconut Milk – 1 can (400 ml)
  • Onion – 1 large (thinly sliced)
  • Green chillies – 2 (slit)
  • Ginger – 1 inch (julienned)
  • Garlic – 4 cloves (sliced)
  • Black pepper – ½ tsp (coarsely crushed)
  • Cloves – 3
  • Green cardamom – 2
  • Cinnamon stick – 1 small piece
  • Curry leaves – 1 sprig
  • Coconut oil – 2 tbsp (for authentic Kerala flavor)
  • Salt – to taste

Instructions

  • 01Heat coconut oil in a deep pan. Add cloves, cardamom, cinnamon, and curry leaves. Sauté for 30 seconds until fragrant.
  • 02Add sliced onion, ginger, garlic, and green chillies. Cook until onions turn soft and translucent (do not brown).
  • 03Add Mr. Freeze Frozen Vegetables and sauté lightly for 2–3 minutes.
  • 04Add ½ cup water, cover, and cook until vegetables are just tender.
  • 05Stir in Golden Crown Coconut Milk and season with salt and crushed black pepper.
  • 06Simmer on very low heat for 5 minutes (do not let it boil vigorously).
  • 07Switch off the flame and keep covered for 5 minutes to allow flavors to blend.
