Ingredients
- Euro Gold Sliced Black Olives in Brine – ½ cup
- Golden Crown Sweet Corn Kernel in Brine – ½ cup
- Big Bell Oregano – ½ tsp
- Cherry tomatoes – 1 cup, halved
- Cucumber – 1 medium, diced
- Onion – ¼, finely chopped
- Lemon juice – 1½ tbsp
- Extra virgin olive oil – 2 tbsp
- Salt – as per taste
- Black pepper – ¼ tsp
- Fresh parsley – for garnish
Instructions
- 01 In a large bowl, combine Sliced Black Olives, Sweet Corn Kernels, cherry tomatoes, cucumber, and onion.
- 02 Sprinkle Big Bell Oregano, salt, and black pepper. Drizzle lemon juice and olive oil over the mixture, toss gently.
- 03 Garnish with fresh parsley and serve immediately for maximum freshness.
